Ah, so yesterday turned out to be one of those days. The kind where I just let everything go and follow the direction of the wind. Time seemed tick a little bit faster yesterday, so after our morning circle we called it a day…to be filled with baking, knitting, and reading. The search for something we could make with the few ingredients we had on hand was a bit of a challenge, however, I eventually came up with something close enough, and we turned out a delicious result.
Delicious Vegan and Gluten Free Applesauce Muffins
1 cup gluten free oats
1 cup gluten free all purpose flour
1/2 cup coconut palm sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 tablespoon cocoa powder
1 cup hemp milk or milk substitute
1/2 cup applesauce
1/3 cup raisins
1/3 cup chocolate chips
2 table spoons flax meal
4 tablespoons water
Combine flax meal with water stirring to combine well. Set aside while you prepare the rest of the ingredients. Mix together dry ingredients. Gradually add wet ingredients. Mix to incorporate. Then add the flax meal mixture and stir to combine.
Spoon into lined muffin tray. Bake at 400 degrees for 25 minutes. Makes 12 muffins.
Flaxseeds are extremely high in omega-3 fatty acids and have a wealth of health benefits. This was the first time I have used flax as a thickener in muffins, but will definitely do some more experimenting. These turned out delicious!

I would definitely try out the honey as a substitute. I use honey a lot as the sweeterner.

These look absolutely delicious! Funnily I was just reading about coconut palm sugar on another blog yesterday, I wonder if honey would work as a substitute? Can't wait to try these : )
