Every Sunday is pancake day at our house. Long before my kids have any knowledge of what the days of the week are, or what order they go in, they know what day is pancake day, and how many days till the next one. That’s because Daddy makes the best pancakes in the whole wide world, I’ve heard more than a lot of times. The biggest part about it, is well, they are gluten free AND vegan. They have taken some years to perfection, but, like I said, they are the best pancakes in the world. So I guess you should be super excited that I am going to share the recipe with YOU!
We usually switch the recipe up a bit from week to week as to what berries go in them, but the recipe goes something like this:
Gluten Free Pancakes
2 1/4 Cups Bob’s Red Mill Gluten Free All Purpose Flour
3 teaspoons baking powder
as much gluten free/vegan chocolate chips as you want
2 bananas mashed
fresh chopped berries of your choosing
1 1/2 cups almond or hemp milk
2 teaspoons vanilla extract
Combine dry ingredients in large bowl and mix to incorporate.
Mash bananas in smaller bowl with potato masher or fork.
Add the rest of the ingredients to bananas and mix.
Pour liquid mix into dry mix and stir.
Make your pancakes. Serve with Earth Balance and syrup. Enjoy!
Grab yourself some breakfast and hop on over to threading light.
