Did you ever make something so easy, with only a few fresh ingredients and have it turn out to be oh so good…as in, lick your fork, and maybe your plate, so good? We had one of those meals recently. So simple, yet incredibly delicious. I’m sure most pestos are pretty similar, but this one, is definitely a crowd pleaser. AND it is vegan and gluten free, which makes it extra special when it turns out to be a hit at our house!
4 cups loosely packed basil leaves
1/2 cup nutritional yeast
4 cloves of garlic (maybe more if you LOVE garlic as much as we do)
1/4 teaspoon salt
1/2 cup toasted pine nuts
1/2 cup olive oil
Place basil, nutritional yeast, and salt in a food processor; pulse until chopped; add nuts and continue to process until blended. While processing, gradually add olive oil in a steady stream.
Pour over some gluten free pasta and you are set to go. Of course, if you do not have issues with gluten, you can use whatever kind of pasta you want.
I have plans for growing a lot of extra basil this year for this simple, quick, healthy topping, and freezing some for later as well!
