Monday Meal Challenge

These are three cooking staples in our house: brown rice syrup, tahini, and miso. What happens when you mix them all….you make something delicious!

I am not really satisfied with this picture of our meal, but I was rushed with bad lighting and it will have to do. We had vegetable brown rice, garlic sauteed baby bok choy, and miso tofu.

Steamed Tofu with Sweet Miso Sauce

1 block of tofu

1 Tablespoon Miso
2 Tablespoons Tahini
2 Tablespoons Brown Rice Syrup
a little water
sliced scallions (optional)

First, cut the block of tofu into slabs and steam in a bamboo steamer. If you do not have a steamer, you can lightly sautee them with a little olive or sesame oil in a frying pan.

While the tofu is steaming, mix the first three ingredients together in a small saucepan, to make the sweet miso sauce. Once mixed, add a little bit of water at a time until it makes a sauce like consistency that you like. Usually 1/2 cup or less.

Warm saucepan on stove over medium heat, but do not boil, until heated through.

Serve over tofu. And top with sliced scallions if desired.

Sweet and simple.
