Cumin Chickpeas

What, it’s not Monday anymore? I’m a day late joining Annie for her Monday Meal Post. My recipe for this week was inspired by a friend when she generously came over to my house and cooked me and my family dinner after Lake was born. This was one side dish we were excited to learn about and love to make….and eat! We use tons of cumin, but it is not spicy at all.

Cumin Chickpeas

olive oil

2 cans of chickpeas
more cumin then you could possibly ever imagine using (trust me)
salt to taste

1.) Coat the bottom of your frying pan with a thick layer of olive oil

2.) heat pan on medium high
3.) when hot pour in chick peas
4.) stir gently and let fry for 1-2 minutes
5.) coat the chickpeas with cumin and cover for 4-5 mintues

(the key is to not stir them around so that the cumin adheres to the chickpeas)

6.) stir gently, coat with more cumin, and cover again for another 4-5 minutes, scrapping any cumin off the bottom of the pan with a wooden spatula

7.) repeat above step one more time
8.) salt to taste
